Three Cheese Manicotti

This is a simple, easy, "throw it together" kind of meals. My MIL (Mother In Law) said she had gotten the recipe off of the pasta box. A quick google search later, and ta da!

(This is for roughly 8 Manicotti shells. If you need more, double!)

The ingredients are:

8 Manicotti Shells
1 container of Ricotta Cheese
2 Tablespoons Shredded Parmesan Cheese
2 Cups Shredded Mozzarella Cheese
1/2 Cup Parsley
2-3 Cups Marinara Sauce
2 Tablespoons Olive Oil.
Some salt & pepper

Step 1:
Preheat oven to 375.
Boil the pasta for 5 minutes then drain and leave aside. (Note: Manicotti shells should remain a bit firm for easier filling!)

Step 2:

Mix Ricotta, 1 T Parmesan, Mozzarella, Parsley, Salt, Pepper.

Step 3:

Fill shells! Use a fork, spoon, fingers, or go easy and use a pastry filler.

Step 4:

Put olive oil in first then marinara sauce in baking dish.
Put shells onto dish then spread remaining sauce and sprinkle remaining parmesan cheese on top.
Cover with foil and bake 30-35 minutes until Manicotti shells are tender and it looks done!

Step 5:

*burp* and feel a little guilty of carb overload (but not really).
